Pad Thai: A Delicious Taste of Thailand
Pad Thai is a beloved Thai dish that’s known for its perfect harmony of sweet, sour, and savory flavors. Here’s how you can recreate this classic dish at home:
Ingredients:
– 200g dried rice noodles
– 2 tablespoons tamarind paste
– 3 tablespoons fish sauce
– 2 tablespoons palm sugar (or brown sugar)
– 2 tablespoons vegetable oil
– 2 cloves garlic, minced
– 1 shallot, finely chopped
– 2 eggs
– 200g shrimp or chicken (optional, can substitute with tofu for a vegetarian version)
– 1 cup bean sprouts
– 2 spring onions, chopped
– 1/4 cup crushed peanuts
– Lime wedges and fresh cilantro for garnish
Instructions:
1. **Prepare the noodles**: Soak the rice noodles in warm water for about 20-30 minutes until soft but not mushy. Drain and set aside.
2. **Make the sauce**: In a small bowl, mix tamarind paste, fish sauce, and palm sugar. Adjust the flavors to your taste—balance is key in Pad Thai!
3. **Cook the base**: Heat vegetable oil in a wok or large skillet over medium heat. Add minced garlic and chopped shallot, sautéing until fragrant.
4. **Add protein**: If using shrimp, chicken, or tofu, cook it in the wok until done. Push everything to one side of the wok.
5. **Scramble the eggs**: Crack the eggs into the wok, scramble them lightly, then mix them with the other ingredients.
6. **Add noodles and sauce**: Toss the soaked noodles into the wok, followed by the prepared sauce. Stir well to coat everything evenly.
7. **Finish with fresh ingredients**: Add bean sprouts and spring onions, cooking for just a minute to keep them crisp.
8. **Garnish and serve**: Plate the Pad Thai, sprinkle with crushed peanuts, and garnish with lime wedges and fresh cilantro.
